Signature Winter Roast

Rio Conejo — Ceciliano Family, Cartago, Costa Rica

For generations, the Ceciliano family has tended this land — not only as farmers, but as caretakers of their community. Ignacio Caciliano is many things, a farmer, a roaster, a seller, but he is also something more – a community caretaker. As the local síndico (community representative), Ignacio spends his spare time organizing river clean-ups and repairing rural roads. He gathers young people in the town plaza, offering guidance and belonging. To him, caring for people and caring for coffee are the same act — one nourishes the other.

On weekends, the family sets up a small espresso stand at the local feria in San José. With a modest machine and sacks of freshly roasted beans, they brew coffee for neighbors and travelers alike. Conversations flow easily — laughter, stories, and news exchanged between sips. Everyone leaves not just with coffee, but with warmth that lingers.

This year, Fulcrum’s Signature Holiday Roast celebrates the Ceciliano family and their Rio Conejo farm — a coffee that stands alone, unblended and true. Roasted in the style that has filled Costa Rican kitchens for generations, it’s smooth, sweet, dark, and full of depth, with notes of cookie, chocolate, and roasted nuts.
Each cup carries the rhythm of Corralillo: the hum of the river, the work of caring hands, the strength of community. This holiday season may this coffee remind us — home is not just where we live, but where we give back.

Brewing Guides

Below are some basic recipes outlining what we found produced the best cup with this coffee, however we encourage each home brewer to experiment and modify these recipes to suite their own tastes.

V60

Brewing coffee on a V60 enhances the flavor profile, allowing the subtle notes of different beans to shine through for a more enjoyable tasting experience. Its user-friendly design gives you precise control over brewing variables, ensuring consistent and delicious results each time.

Coffee: 25g
Grind: Medium fine (like table salt)
Water: 400g 91° C/ 196° F
Total Brew Time: 3.5 Minutes
Yields appx. 1.5 cups

Prep
Wet the filter in the V60 cone with hot water over a mug or carafe. Dispose of water. Place 25g of ground coffee into the wet filter and tap sides to even out the grounds.

Bloom
Pour 50g of water and stir to ensure all the grounds are wet. Start timer and wait 30 seconds for the coffee to de-gas.

Brew
Pour 150g of water evenly over the coffee. Grab the base of the brewer and swirl the brew lightly once. Pour 200g of water evenly over the coffee. Swirl the brew lightly once more. Drain time should take about 1-2 min.
