We chose Tatiana's coffee because it epitomizes the extraordinary collaboration of two remarkable women—Tatiana and her mother, Doña Leda—who have dedicated themselves to creating outstanding coffee, even in the wake of Tatiana's father's passing. Their Central American hybrid coffee is notably more productive than traditional varieties, yielding its first harvest after just one year, while also displaying impressive rust resistance, which further reduces production costs and reliance on agrochemicals. This hybrid quality led them to compete in the prestigious Cup of Excellence in 2023, showcasing their commitment to sustainable coffee production and resilience to climate change. Their farm employs a diversified shade system that fosters a more favorable microclimate and contributes to biodiversity. They refrain from using insecticides or herbicides to preserve soil integrity.
Managed entirely by Tatiana and Doña Leda, the farm exemplifies women's empowerment in a male-dominated industry, as they undertake every aspect from agronomic management to marketing. Tatiana’s community work, from volunteering with the Palliative Care Association to supporting the economically disadvantaged, highlights her deep-rooted commitment to social responsibility. The name of their project, Legados Café Artesanal (Artisan Coffee Legacies), reflects their desire to honor Tatiana's late father, Don Gerardo, whose dream was for the family to export their coffee. By opening their micro-mill in 2018, they have become a beacon of possibility for women in Costa Rica's coffee industry, showing that they can manage farms effectively. For Tatiana and Doña Leda, their coffee transcends its physical form; it serves as a vehicle for sharing emotions and memories, inviting others to consider the legacies they wish to leave behind.

Prep
Wet the filter in the V60 cone with hot water over a mug or carafe. Dispose of water. Place 25g of ground coffee into the wet filter and tap sides to even out the grounds.
Bloom
Pour 50g of water and stir to ensure all the grounds are wet. Start timer and wait 30 seconds for the coffee to de-gas.
Brew
Pour 150g of water evenly over the coffee. Grab the base of the brewer and swirl the brew lightly once. Pour 200g of water evenly over the coffee. Swirl the brew lightly once more. Drain time should take about 1-2 min.
