In the scenic Muranga County of Kenya, nestled on the slopes of the majestic Aberdare Mountain range, lies the esteemed Kangiri Farmers' Cooperative Society (FCS). Within its cooperative, the Kanguya Factory boasts a rich tradition of crafting exceptional coffee.
Established in 1969, Kangiri FCS has since evolved into a renowned cooperative comprising 414 dedicated farmers. The cooperative's vision transcends its humble beginnings, now encompassing five factories: Kangurumai, New Irati, Gatumbi, Kanjathi, and the esteemed Kanguya. These factories owe their success to the pristine waters of the Irati river, a crucial resource flowing nearby and contributing to the meticulous processing of their coffee.
At Kangiri FCS, a meticulous approach governs the coffee production process. The farmers painstakingly hand-sort the cherries, selectively delivering only the ripest fruits to the factory for processing. Following pulping, the parchment undergoes an overnight fermentation in large tanks. The next day, the parchment is meticulously washed and meticulously graded in channels, ensuring each grade, from P1 to Plights, receives thorough attention. Subsequently, the parchment is carefully spread across raised beds, where it is meticulously dried for an average of 9 to 15 days beneath the nurturing African sun. This meticulous process allows the flavors to evolve and the beans to achieve ideal moisture content.

Prep
Wet the filter in the V60 cone with hot water over a mug or carafe. Dispose of water. Place 25g of ground coffee into the wet filter and tap sides to even out the grounds.
Bloom
Pour 50g of water and stir to ensure all the grounds are wet. Start timer and wait 30 seconds for the coffee to de-gas.
Brew
Pour 150g of water evenly over the coffee. Grab the base of the brewer and swirl the brew lightly once. Pour 200g of water evenly over the coffee. Swirl the brew lightly once more. Drain time should take about 1-2 min.
